CRANBERRY AND PUMPKIN BREAD
2 1/4 c unbleached flour
2 c granulated sugar
1 tbsp pumpkin pie spice
1 tsp baking soda
1/4 tsp salt
1 c pumpkin, canned
1 c cranberries; chopped
1/4 c olive oil
4 whole egg whites; slightly beaten
Preheat oven to 350. Prepare two 8 x 4" pans with cooking spray and flour; set aside. In a mixing bowl,
combine flour, sugar, pumpkin pie spice, baking soda, and salt. In another mixing bowl, combine
pumpkin, cranberries, oil, and egg whites. Add wet ingredients with dry ingredients just until moistened.
Pour mixture evenly into prepared pans. Bake for 60 minutes.
